Firecracker Meatballs

Ingredients

For the meatballs:
2 pounds ground chicken
1 1/2 cups panko breadcrumbs
2 eggs
1/4 cup onion, chopped
3 cloves garlic, minced
1 tablespoon parsley, chopped
salt, to taste
pepper, to taste

For the sauce:
1/2 cup buffalo sauce
1/2 cup light brown sugar
2 tablespoons soy sauce

For topping:
parsley, optional, chopped
crushed red pepper flakes, optional

Directions

Preheat the broiler on high.

Line a baking sheet with foil.

In a large bowl, combine the chicken, breadcrumbs, eggs, onion, garlic, and parsley.

Season with salt and pepper.

Roll the chicken mixture into 1-inch meatballs and place them on the prepared baking sheet.

Spray the meatballs with nonstick cooking spray.

Broil the meatballs until browned, about 6 minutes on each side, flipping halfway through.

Place the browned meatballs into a slow cooker.

Add the buffalo sauce, brown sugar, and soy sauce.

Cover and cook on low for 2 hours.

Serve hot with parsley and red pepper flakes.
