Sweet & Sour Slow Cooker Lit’l Smokies
Ingredients
1/4 cup apricot jam
1/4 cup vinegar
3 tablespoons soy sauce
1 clove garlic finely minced
1 teaspoon grated fresh ginger
1/4 cup chicken broth
3 tablespoons corn starch
1-1.5 lb little smokies or regular smoked sausage sliced
1 19oz can pineapple tidbits or chunks, with juice (100% real juice)
1 red pepper cut into 1″ pieces
1 green pepper cut into 1″ pieces
1 medium onion into 1″ pieces
Directions
In a 3-4qt slow cooker, whisk together jam, vinegar, soy sauce, garlic, and ginger. Combine broth and corn starch and stir into sauce in slow cooker.
Add smokies, pineapple, peppers, and onion. Cover and cook on low for 4-6 hours, or high for 2-3 hours, until heated through. Keep on warm until ready to serve (or throughout the party!).
