Chicken Tortellini Soup

Ingredients

4 boneless, skinless chicken thighs
2 large carrots, peeled and chopped
2 stalks of celery, peeled and diced
1 small onion, diced
3 garlic cloves, minced
6 cups of chicken stock
1 tsp. Italian seasoning
1/2 tsp. paprika
1 tsp. salt
1/8 teaspoon black pepper
19 ounces frozen cheese tortellini
Fresh Italian parsley, chopped
Freshly grated Parmesan cheese

Directions

Add the carrots, celery, onion, garlic, chicken stock, Italian seasoning, paprika, salt and black pepper to the slow cooker.

Gently stir everything together. Into your slow cooker add the vegetables, chicken stock and seasonings.

Add in the chicken thighs to the slow cooker.

Cook on high 4 hours or low 6 hours.

Remove the chicken from the slow cooker and shred using two forks and return the chicken to the slow cooker.
Add in the cheese tortellini {or tortellini of your choice}. Stir well.

Cover and cook an additional 5 minutes or until pasta is cooked through. Garnish with parsley and Parmesan cheese.

Serve with crusty bread!
