CrockPot Green Chile Chicken
Ingredients
1 pound boneless skinless chicken breasts
1/2 teaspoon kosher salt
1/4 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon cumin
3-4 grinds fresh black pepper
1 7 ounce can mild green chiles
8 ounces cream cheese
Directions
Put the boneless skinless chicken breasts in a single layer in the bottom of the crock pot. Sprinkle the spices evenly over the chicken.
Pour the green chiles evenly over the chicken breasts.
Cut the cream cheese into cubes and add them to the crock pot on top of the chiles and chicken.
Cook on low for 6-8 hours, or on high for 2-3 hours. Once the chicken is fully cooked, shred the chicken with two forks. Use a wooden spoon or spatula to stir the shredded chicken into the sauce. Stir until the sauce is nice and creamy, and no lumps of cream cheese remain.
Serve the chicken garnished with some fresh cilantro and jalapenos for a tasty and simple dish!
