Slow Cooker Chicken and Stuffing

Ingredients

4 boneless, skinless chicken breasts
1 1/2 tablespoons Italian seasoning
salt, to taste
pepper, to taste
1 (10.5-ounce) can cream of chicken soup, low sodium
1 cup sour cream
1 (6-ounce) box stuffing mix
3/4 cup low sodium chicken broth
2 cups fresh green beans

Optional toppings:
1/2 cup onions, diced
1/2 cup celery, diced
1/4 cup dried cranberries
1/2 cup crumbled sausage, cooked or raw
2 teaspoons dry rosemary

Directions

To begin, season the chicken with Italian seasoning, salt, and pepper.

Place into the bottom of a lightly greased slow cooker.

In a large bowl, mix the sour cream, soup, stuffing, and half of the chicken broth together.

Add the green beans and stuffing mixture to the slow cooker.

Cook for 4 hours on high, or on low for 6-7 hours.

Dress with optional toppings and serve with gravy, mashed potatoes, or buttermilk biscuits, if desired.

If you prefer additional moisture, add the rest of the chicken broth, mix well, and cook for an additional 10 minutes.
