Slow Cooker Chicken Lo Mein

Ingredients

1 lb boneless skinless chicken breasts
1 cup matchstick carrots
1 red pepper sliced
⅔ cup lite soy sauce
½ cup hoisin sauce
2 tbsp oyster sauce
4 tbsp brown sugar
4 cloves garlic minced
½ tsp red chili flakes
8 oz sugar snap peas
2 green onions chopped
Sesame seeds optional
14 oz lo mein noodles

Directions

Place the chicken breasts at the bottom of a 6 quart slow cooker. Add the carrots and red peppers on top.

In a mixing bowl, whisk together the soy sauce, hoisin sauce, oyster sauce, brown sugar, garlic and red pepper flakes.

Pour the sauce over the chicken and veggies.

Cover and cook on LOW for 6 hours or HIGH for 4 hours.

15 minutes prior to serving, remove the chicken from the slow cooker and shred with two forks.

Add the shredded chicken back to the slow cooker along with sugar snap peas. Stir to combine.

Cover and cook an additional 15 minutes.

Cook the noodles according to package directions. Drain.

Add the noodles to the slow cooker and toss to coat.

Sprinkle on green onions and sesame seeds for garnish. Serve hot.
