Slow Cooker Country Captain

Ingredients

1 large onion, chopped
1 medium sweet red pepper, chopped
2 teaspoons garlic, minced
3 pounds chicken thighs, boneless and skinless
1 tablespoon curry powder
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1 teaspoon dried thyme
1 tablespoon packed brown sugar
1/2 cup chicken broth
1/2 cup golden raisins
1 (14.5-ounce) can diced tomatoes, undrained
rice, optional, cooked, hot, for serving
parsley, optional, chopped, for garnish

Directions

Place the onion, pepper, and garlic in a 6-quart slow cooker.

Place the chicken pieces over the vegetables.

Whisk the curry powder, cinnamon, ginger, thyme, brown sugar, and chicken broth together.

Pour the broth mixture over the chicken.

Cover and cook on high for 1 hour.

Add the raisins and tomatoes.

Reduce the heat to low and cook until the chicken reaches 165 degrees F when tested with a meat thermometer, about 2.5 hours.

Serve over the rice and garnish with parsley.
