Slow Cooker Moroccan Chicken

Ingredients

4 carrots, peeled, sliced 1-inch thick, 2 cups
1 onion, chopped, 1 cup
1 cup golden raisins
1/2 cup pimento stuffed green olives
1 1/2 lbs. boneless skinless chicken thighs, cut in 2-inch pieces
1 (14.5 oz.) can diced tomatoes
2 Tbs. flour
1 clove garlic, minced
1 tsp. ground cinnamon
1/2 tsp. ground cumin
1/2 tsp. kosher salt
1/3 cup toasted sliced almonds
2 Tbs. chopped parsley
hot cooked couscous, serving suggestion

Directions

Arrange carrots, onion, raisins and olives on bottom of slow cooker. Top with chicken.

Combine diced tomatoes with their juices, flour, garlic, cinnamon, cumin and kosher salt until blended. Pour over chicken and vegetables.

Cook 7-8 hours on low or 3-4 hours on high, until chicken is thoroughly cooked and vegetables are tender.

Stir until blended. Top with almonds and parsley. Serve with hot cooked couscous, if desired.
