Slow Cooker Spicy White Chicken Chili

Ingredients

1 1/2 lb boneless, skinless chicken breast
3/4 C green bell pepper, chopped
3/4 C yellow onion, chopped
1 Jalapeño, diced
3 cloves garlic, minced
3 : 15oz cans Northern white beans, drained and rinsed
11 oz can corn, drained
1 1/2 tsp dried oregano
1/8 tsp cumin
1/8 tsp cayenne, optional
1/2 – 1 tsp red pepper flakes, optional
1 tsp ground black pepper
2 tsp salt
32 oz chicken broth

Directions

Add all ingredients to the bowl of a 5-6 quart slow cooker.

Cook on high for 4 hours.

Remove chicken, shred and return to slow cooker.

Divide among bowls.

Serve with optional toppings such as cheese, jalapeño slices, sour cream, etc.
