Slow Cooker Sweet Mexican Pork

Ingredients

3-4 pounds pork loin roast
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon smoked paprika
1 teaspoon chili powder
1 can red enchilada sauce 10 ounces divided
1 cup brown sugar divided
4 cans chopped green chiles 4 ounces divided
1 cup salsa
1 cup Coke

Directions

Add your pork loin to the slow cooker.

Combine the onion powder, garlic powder, smoked paprika, and chili powder and rub them all over the pork.

Add half of the enchilada sauce, half the brown sugar, half the green chiles, all the salsa, and the soda.

Cover and cook on low for 6-8 hours or high for 4-6 hours.

Take the pork out of the slow cooker and shred it. Add the rest of the enchilada sauce, brown sugar, and green chiles to the slow cooker. Cover and cook on low for 30-60 minutes more.
