Slow Cooker Mushroom Quinoa
Ingredients
2 C uncooked quinoa
4 C chicken or beef broth
1 package dry onion soup mix
2 6.5 oz cans sliced mushrooms, drained
2 15 oz cans whole peeled straw mushrooms
1 chopped sweet onion
1-2 tsp salt
Directions
Combine all ingredients into your slow cooker. Stir gently.
Cook on low for 6 – 6.5 hours until quinoa is fully cooked (liquid should all be absorbed)
