Slow Cooker Swamp Soup

Ingredients

1/2 tablespoon butter or cooking oil
1 pound andouille, Conecuh sausage or any other smoked sausage, chopped
1 medium chopped onion
2 stalks celery sliced
1 (32 ounce) carton low sodium chicken broth
4 cups water
2 (15 ounce) cans white beans, drained and rinsed
1 (1 pound) bag frozen turnip greens, thawed
1 tablespoon Cajun/creole seasoning (Tony Chachere’s or SLAP YA MAMA)
1/2 teaspoon garlic powder
1/4 teaspoon freshly cracked black pepper, or to taste
1 teaspoon hot sauce or 1/2 teaspoon cayenne (optional to taste)

Directions

Add butter or oil to a skillet. Add the sausage and brown slightly.

Remove from pan and add to your crockpot.

In the same skillet, and the onion & celery. Cook until the onion is limp. Remove and add to crockpot.

Add the rest of the ingredients to the crockpot. Cook on high for 3 hours, or low for 5 hours.
