Slow Cooker Vegetarian Chili
Ingredients
1/2 of a red onion, diced
4 garlic cloves, minced
1 poblano pepper, seeds removed, diced (optional)
1 bell pepper, seeds removed, diced
2 large carrots, peeled, diced
2 celery stalks, diced
1 jalapeƱo, seeds removed, diced (optional)
2 – 15 ounce cans of diced tomatoes
1 – 15 ounce can of tomato sauce
1 – 6 ounce can of tomato paste
2 teaspoons oregano
2 teaspoons cumin
2 Tablespoons chili powder
1/4 teaspoon cayenne pepper
1/2 teaspoon salt
1/8 teaspoon black pepper
1 – 15 ounce can of black beans, drained and rinsed
1 – 15 ounce can of kidney beans, drained and rinsed
1 – 15 ounce can of white beans, drained and rinsed
Garnishes:
Cheese
Cilantro
Green onions
Sour cream
Diced red onion
Crushed chips
Directions
Place all ingredients in the crockpot and stir.
Cover and cook on low for 6-8 hours or high for 3-4 hours.
Serve warm with your favorite garnishes.
