Crock Pot Cabbage Soup
Ingredients
1 ½ tablespoons olive oil
¼ onion finely chopped
1 clove garlic minced
2 cups low-sodium vegetable broth or chicken broth
½ teaspoon kosher salt
¼ teaspoon dried oregano
¼ t teaspoon smoked paprika
¼ teaspoon ground black pepper
¼ head cabbage chopped into 1-inch chunks
1 medium carrot peeled and chopped
1 celery stalk sliced thinly
½ can 7 ounces chopped tomatoes, or ½ cup fresh tomatoes
Directions
In a skillet over medium heat, add olive oil, chopped onion, and minced garlic. Sauté until the onions are translucent, about 3-5 minutes.
Transfer the sautéed onions and garlic to the slow cooker.
Add the chicken broth, salt, pepper, oregano, paprika, cabbage, carrots, celery, and tomatoes to the slow cooker.
Stir the ingredients well, ensuring even distribution.
Cover the slow cooker and cook on low for 4-6 hours or until the vegetables are tender.
Before serving, taste and adjust the seasoning if needed. You can add a pinch of more smoked paprika.
Ladle the soup into bowls and enjoy.
