Slow Cooker Ranch Roasted Potatoes

Ingredients

3 pounds red potatoes
1 packet ranch dressing mix
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup olive oil
1/4 cup fresh chopped parsley (optional)

Directions

Wash potatoes then dry with a kitchen towel or just leave them out a bit to dry on their own (we don’t want them wet when we add the other ingredients).

Cut potatoes in half (quarter any large ones – you want all of the pieces and potatoes to be relatively the same size). Add potatoes to crock pot.

Combine ranch dressing mix, salt, pepper and olive oil in a small bowl then mix well. Pour dressing mixture over potatoes then stir until potatoes are evenly coated.

Cover then cook on Low for 6 hours, High for 4 hours or until potatoes are fork-tender. Gently stir once or twice during cooking.

When ready to serve, stir in parsley then remove potatoes to a serving bowl. Drizzle cooking liquid from the crock pot over the potatoes.
