Crockpot Chicken Enchilada Casserole
Ingredients
2 pounds chicken cubed
1 tablespoon or 1 ounce packet low low-sodium taco seasoning
28 ounces enchilada sauce
7 ounces green chiles
15 ounces black beans drained
½ cup chopped yellow onion
2 cup Mexican cheese
8 small corn tortilla shells torn
3 tablespoons chopped cilantro
Directions
To a crockpot add the chicken and sprinkle the taco seasoning on top. Stir so the chicken is fully coated.
To the crockpot add the enchilada sauce, green chiles, black beans, and yellow onion.
Cook on low for 4-6 hours or on high for 2-3 hours.
Add 1 cup of cheese and torn-up tortilla shells. Stir until combined.
Top with the remainder of the cheese.
Cover the crockpot. Cook on low for an additional 20 minutes or until the cheese has melted.
