Beef Chili Recipe
Ingredients
2 Tablespoons olive oil
1/2 of a red onion, diced
4 garlic cloves, minced
1 pound ground Beef (80/20)
1 large red bell pepper, seeds removed, diced
1 jalapeño, seeds removed, diced
3 Tablespoons chili powder
1 Tablespoon cumin
1 teaspoon paprika
1 teaspoon oregano
1/4 teaspoon cayenne pepper
2 Tablespoons cocoa powder
1 – 15 ounce can of pinto beans or black beans, drained and rinsed
1 – 15 ounce can of kidney beans, drained and rinsed
1 – 15 ounce can of fire roasted diced tomatoes
1 – 15 ounce can of diced tomatoes
2 Tablespoons tomato paste
GARNISHES:
Sour cream
Cheese
Fresh cilantro
Diced red onion
Avocado, chopped
Jalapeno
Diced tomatoes
Directions
In a large skillet heat 2 Tablespoons olive oil over medium heat. Add the beef and cook until browned. Drain the fat and add to the slow cooker.
Add the remaining ingredients to the slow cooker and cook on low for 5-6 hours or high for 3-4 hours.
Serve warm in soup bowls with your choice of toppings like sour cream, avocado, cheese and chopped red onion.
