Slow Cooker Chipotle Beef Chili
Ingredients
1 lb. ground beef, cooked, fat drained
1-15.5 oz can of corn, drained and rinsed
1-15.5 oz can of dark red kidney beans, drained and rinsed
1-15.5 oz can of black beans, drained and rinsed
1-15.5 oz can of cannelini beans, drained and rinsed
2-14.5 oz cans of diced tomatoes
1/2 sweet onion, chopped
2 garlic cloves, minced
1 green pepper, chopped
2 jalapeño, seeds removed, chopped
1 carrot, peeled and chopped
2 Tablespoon chili powder
1/2 teaspoon chipotle chili powder
1 teaspoon dried oregano
1/2 teaspoon red pepper
2 teaspoon cumin
1/2 teaspoon paprika
Salt and pepper to taste
Garnish:
Fresh cilantro, chopped
Cheese
Sour cream or Greek yogurt
Green onions, chopped
Fresh jalapeños, chopped
Avocado
Red onion, chopped
Directions
Cook meat until browned and drain. Add the ground beef to the slow cooker with all remaining ingredients and stir.
Cover with lid and cook on low for 5 hours or on high for 3-4 hours.
Add salt and pepper to taste. Serve warm with garnishes of your choice.
