Slow Cooker Stuffed Pepper Soup
Ingredients
2 Tablespoons olive oil
1 lb. ground turkey (or ground beef, ground pork, ground chicken)
1/2 large sweet onion, chopped
4 garlic cloves, minced
1 medium red pepper, seeds removed, chopped
1 medium green pepper, seeds removed, chopped
1 -14.5 oz. can of diced tomatoes
1 – 15 oz. can of tomato sauce
4 cups chicken broth
1 teaspoon dried basil
1/4 teaspoon dried thyme
1/4 teaspoon cayenne red pepper
1/2 teaspoon dried oregano
1 1/2 uncooked cups brown rice, cooked
1/2 cup fresh parsley, stems removed, chopped
Directions
Heat the 2 Tablespoons olive oil in a large skillet. Cook the ground turkey for 2 minutes. Add the onion and garlic and continue to cook until the turkey is browned and cooked through.
Put the ground turkey mixture in the slow cooker along with the peppers, diced tomatoes, tomato sauce, chicken broth, dried basil, dried thyme, cayenne red pepper and dried oregano. Cover and cook on low for 5-6 hours or high for 3 hours.
When you are ready to serve the soup add the cooked rice and chopped parsley, stir and serve.
