Chicken & Sausage Gumbo
Ingredients
Meat:
1 pound Chicken, diced & browned
1 pound Smoked Sausage, sliced & browned
Roux:
1/4 Cup Canola or vegetable Oil
1/2 Stick Butter
1/2 Cup Flour
Trinity:
1 onion, large, diced
1 green bell pepper, large, diced
1 celery stalk, diced
2 garlic cloves, minced
Seasoning:
2 teaspoons creole seasoning
1 teaspoon each onion powder & garlic powder
1/2 teaspoon each salt & black pepper
2 dried bay leaves
Cayenne pepper to taste
Gumbo:
1 (32 oz) carton chicken broth
1 can (14 1/2 oz.) diced tomatoes, with juice
10 oz package of frozen or fresh okra
Directions
Add the oil to a large skillet. Brown your meats. You may have to do this in batched. Remove meats from skillet, set aside.
In the same skillet add the butter and flour and cook on medium heat, constantly stirring until you reach the color of milk chocolate.
Add your ‘Trinity’ (onion, bell peppers and celery). Cook in the Roux for a few minutes then add the garlic & seasonings. Cook another minute or two.
Add chicken broth & diced tomatoes to crockpot. Stir in roux & trinity mixture. Add in browned meat, and okra.
Cover and cook on low for 6-7 hours or on high for 3-3 1/2 hours. Skim off fat. Serve gumbo over hot cooked rice.
