CrockPot Southwestern Chicken
Ingredients
2 Teaspoons Kosher Salt
2 Teaspoons Ground Cumin
2 Teaspoons Garlic Powder
3 Pounds Boneless Skinless Chicken Breasts
15 Ounces Canned Black Beans (Drained And Rinsed)
15.25 Ounces Canned Whole Kernel Corn (Drained)
9 Ounces Canned Diced Green Chiles
1 Medium Yellow Onion (Peeled And Diced)
1 Medium Red Bell Pepper (Seeded And Diced)
¼ Cup Chopped Fresh Cilantro
1 Medium Lime (Juiced)
Directions
In a small bowl, combine the salt, cumin and garlic powder.
Place the chicken in a single layer in the bottom of a 6 quart or larger slow cooker.
Sprinkle chicken with about half of the seasoning mixture.
Dump the rest of the ingredients on top of the chicken and top with the remaining seasoning mix.
Stir until combined.
Cover and cook on HIGH for 2 1/2 to 3 hours, or on LOW for 3 1/2 to 4 hours or until the chicken is fully cooked.
