General Tso Stew
Ingredients
1 cup tomato juice
1/2 cup pickled cherry peppers, chopped
2 tablespoons soy sauce
2 tablespoons hoisin sauce
1 tablespoon peanut oil
1-2 teaspoons crushed red pepper flakes, to taste
1 pound chicken, shredded and cooked
1 1/2 cups onion, chopped
1 cup fresh broccoli, chopped
1/4 cup green onions, chopped, optional, for topping
1 teaspoon sesame seeds, optional, toasted
Directions
In the pot of a slow cooker, combine the tomato juice, pickled cherry peppers, soy sauce, hoisin sauce, peanut oil, and crushed red pepper flakes.
Stir in the chicken, onion, and broccoli.
Cover the slow cooker and cook on low until the vegetables are tender, for about 2 hours.
Top with green onions and sesame seeds and serve!
