Slow Cooker Asian Honey Sesame Chicken Sliders
Ingredients
1 1/4 lb pounds Boneless Skinless Chicken Thighs
1/2 sweet onion, chopped
3/4 cup honey
1/4 cup soy sauce
1 teaspoon toasted sesame oil
2 Tablespoons tomato paste
2 garlic cloves, chopped
1 to 2 teaspoons red chili paste
1/2 cup chicken broth
1/4 teaspoon salt
A couple cranks of the pepper mill
2 teaspoons cornstarch
4 Tablespoons water
Directions
Arrange the chicken thighs in the bottom of the slow cooker and pour the chopped onion over top.
In a large mixing bowl combine the honey, soy sauce, toasted sesame oil, tomato paste, garlic cloves, red chili paste {optional}, chicken broth, salt and the pepper. Mix to combine.
Pour the sauce over the chicken and onions making sure everything is coated in the sauce.
Cook on low for 4-1/2 hours, and then shredded the chicken with two forks. Once you shred the chicken return it to the slow cooker and mix to coat with the sauce. In a small bowl combine the cornstarch and water until it is dissolved. Add that to the slow cooker and mix to combine everything together. Cover and finish cooking for 30 minutes.
When the chicken is done cooking remove from the slow cooker and sprinkle with sesame seeds.
Serve the Asian Pulled Chicken on slider buns along with your favorite coleslaw and other toppings.
