Slow Cooker Bourbon Street Chicken
Ingredients
2 pounds boneless, skinless chicken thighs
2 cups halved button mushrooms
1 cup diced celery
1 cup diced green bell pepper
2 cloves garlic, minced
½ cup diced yellow onion
2 teaspoons minced fresh ginger
¼ cup apple cider
1 tablespoon apple cider vinegar
2 tablespoons brown sugar
2 tablespoons molasses
5 tablespoons soy sauce
3 tablespoons cornstarch
¼ cup water
2 tablespoons bourbon
1 teaspoon red pepper flakes
2 green onions, thinly sliced
Directions
Arrange chicken thighs and vegetables (from mushrooms to ginger) in a 6-quart slow cooker.
In a mixing bowl, add apple cider through red pepper flakes. Whisk until cornstarch has dissolved. Pour into slow cooker and mix gently, keeping the chicken at the bottom.
Cover and cook on low for 6 hours, or on high for 4 hours.
Remove chicken and pull apart for a chunky shred. Return chicken to slow cooker and combine with sauce.
Garnish with green onions and serve with rice.
