Slow Cooker Chicken Thighs
Ingredients
1 tablespoon olive oil
8 chicken thighs, bone-in, skin-on
salt, to taste
pepper, to taste
3/4 cup ketchup
1/3 cup soy sauce
1/3 cup honey
3 tablespoons garlic, minced
1/2 teaspoon onion powder
1/4 teaspoon dried thyme
1 teaspoon dried parsley
1/4 teaspoon dried mustard
2 tablespoons parsley, optional, chopped
Directions
In a cast-iron skillet over medium heat on the stove-top, heat the olive oil.
Season the chicken thighs with salt and pepper.
Sear the chicken in the skillet, skin side down, until golden.
Transfer the chicken from the skillet to the slow cooker, skin side up.
In a medium-sized bowl, combine the ketchup, soy sauce, honey, garlic, onion powder, dried thyme, dried parsley, and dried mustard.
Once combined, pour the mixture over the chicken in the slow cooker.
Place the lid on the slow cooker and cook on high until the chicken is cooked through and the sauce has thickened, for about 3 hours.
Plate the chicken, pour some of the sauce on top, garnish with parsley, and serve!
