Easy Crockpot Alfredo Pasta
Ingredients
2 (14.5 oz) jars of Alfredo sauce
2 medium sweet potatoes, diced (4 cups worth)
2 cups vegetable broth
1/2 lb UNCOOKED rigatoni pasta
1/2 cup fresh chopped parsley
1 cup freshly grated Parmesan cheese
1 tablespoon cornstarch
salt, to taste
Directions
In a large crockpot, add sweet potatoes, Alfredo sauce, vegetable broth, and uncooked rigatoni.
Cook on high for 2-3 hours, checking every so often to make sure noodles are submerged in liquid.
Cook until desired pasta consistency (closer to 3 hours for a more soft pasta, less for al dente).
Once pasta is desired texture, add in cornstarch, grated Parmesan, and parsley.
Stir and allow to thicken for 5 minutes.
Salt to taste.
