Pineapple Pork Loin
Ingredients
2-3 pound pork loin
2 tablespoons vegetable oil
salt and pepper, to taste
8 cloves garlic, minced
1/4 cup soy sauce
1/2 cup brown sugar
1 (23.5-ounce) can pineapple chunks, undrained
Directions
Trim the pork loin of excess fat, and season with salt and pepper. Set aside.
Heat a large pan over medium-high heat. Add oil. Once the oil is hot, add the pork loin. Brown on each side for 2-4 minutes until golden brown.
Add the pork to the slow cooker and rub it with garlic.
Add soy sauce and the can of pineapple chunks to the slow cooker.
Pour in the brown sugar evenly on top of the pork.
Put the lid on the slow cooker and cook on low heat for 4-6 hours.
