Crockpot Rice Pilaf
Ingredients
2 (14 oz.) cans ready to serve chicken broth with roasted garlic
1-2/3 cups water
3 cups long grain brown rice
1/2 cup onion (minced)
1/4 tsp. pepper
Directions
Combine broth and water in a 4 cup glass measuring cup and microwave on high until very hot, about 5 minutes. You can also heat the broth and water mixture in a saucepan on the stove top. Don’t let the mixture boil.
Spray a 3-1/2 quart slow cooker with cooking spray to reduce sticking.
Combine rice, onion, and pepper in the slow cooker and mix to combine.
Pour hot broth mixture over and cover crockpot.
Cook on high for 1-1/2 to 2 hours, until rice, is tender. Stir and serve.
